I am lucky enough to live in Tasmania and have access to all Tasmania’s excellent produce, I have been cooking commercially in many restaurants, and now mostly for my young family for 25 years, and I have watched Tasmania’s reputation as a producer of superior produce grow. I cook with local and seasonal produce when ever possible. My favorite Tasmanian foods would be octopus, oysters, quail, salmon and the wine, of course!
