Caramelised onion dip

This dip recipe i promised to post for guests the weekend we opened the bistro in February! apologises it has taken so long to post the recipe, I am quite a few behind now with the menu changing each week and new dishes created. How much does a nice dip and good bread elevate a simple meal like soup?

2 brown onions
tablespoon butter
2 tablespoons brown sugar
250 grams cream cheese
salt and pepper

to caramelise the onions peel and slice them into a fine slice, saute them over a medium high heat in a heavy based pan with the butter until cooked through. Add the sugar and continue to cook over a low heat until caramelised. Cool. Beat the cream cheese and mix the onions through. Season with salt and pepper.
